  20. 40 g d’huile de pépins de raisin

  1. La veille :Bouillir la crème avec le sel et la vanille fendue et grattée. Verser le mélange chaud sur le chocolat blanc. Mixer à l’aide d’un mixeur plongeant, filmer au contact et réserver au frais pour une nuit.
  2. Tamiser le sucre glace, la farine, la levure chimique et le sel. Mélanger avec la poudre d'amande, incorporer les graines de gousses de vanille et Tonka râpée. Verser le beurre noisette sur le miel, verser cette préparation sur le mélange de poudre.Ajouter les blancs d'oeufs, bien mélanger le tout.
    Répartisser 300g d’appareil à cake dans les moules préalablement beurrés et enfourner à 165°C pendant 40 minutes.Démouler et laisser refroidir sur grille.
  3. Le glaçage :
    Faire fondre le chocolat blanc et le beurre de cacao au bain marie. Ajouter l’huile, mixer le tout à l’aide d’un mixeur plongeant.
  4. Montage
    A l’aide d’une spatule, recouvrir chaque cake de 70g de ganache chocolat blanc, en épousant la partie bombée. Parsemer cette partie d’éclats de chocolat blanc, puis mettre au congélateur 30min.Piquer les cakes avec une pique en bois et les plonger dans le glaçage chocolat en laissant la partie de la ganache. Moi je l’ai enrobé en entier. Laisser s’égoutter puis poser les cakes sur une feuilles de papier cuisson.
