Ça va épaissir encore en refroidissant. Ajoutez 50 g de beurre et mélangez. Transvasez dans un autre récipient et filmez au contact, c'est-à-dire en collant le film alimentaire à la crème


- Ajoutez le reste du beurre petit à petit, sans cesser de fouetter à vitesse moyenne. Quand tout le beurre est incorporé laissez tourner le fouet encore une petite dizaine de minutes pour bien foisonner la crème mousseline. Elle doit se tenir toute seule quand vous relevez le fouet, avec un peu la consistance d'une pâte à tartine
